Cinnamon Raisin Bread
Recipe
Ingredients:
2 teaspoons dry active yeast
1 1/2 cups warm water
1 Cup of raisins
3 1/2 to 4 cups Flour - Can be any mixture of flours - Rye,
Whole wheat, White
2 teaspoons of olive oil or 1/3 cup of flaxseed meal
1 tablespoon of honey or 1/2 tablespoon of sugar
1/2 tablespoon of salt
1 tablespoon of cinnamon
Directions:
In a large bowl, mix 1/2 cup of warm water (not hot). Mix
in honey or sugar, add yeast and let sit for 5 minutes. Then
mix in 3/4 cup of whole wheat flour. Let sit 15 minutes. Then
add 1 cup of warm water, oil or flaxseed meal and salt. Then
add 1 cup flour and mix. By this time you should be able to
start kneading on a lightly floured surface. Adding the rest
of the flour while kneading. If you don't need it, (dough
is not sticky) don't add it. Knead for 10-15 minutes. In the
last 5 minutes of kneading. This is when you can add the raisins
and cinnamon.
Once you are done kneading, shape into a loaf shape and place
in a lightly greased bread pan. Place in the oven (no heat
just turn the light on). Wait 1-1 1/2 hours or until dough
has doubled in size. Turn oven on to 350 degrees and baked
for 35 - 40 minutes.
To check and see if it is done, lightly tap the bottom of
the pan with something wooden (I use a wooden rolling pin)
if it sounds hollow it is done. Let cool for 1 hour.
