Mayonnaise Recipe

You can't get any better than making your own mayonnaise. Making your own means that you will get to put in all the ingredients yourself. If would like to add a little more of one ingredient and a little less of another, you can. Just don't change it to much or it might not even taste like mayonnaise or may separate.

These are the ingredients you will need.

2 Large egg yolks
2 1/2 Tablespoons of lemon juice
1/4 Teaspoon of salt ( I like to use organic sea salt )
A dash of white pepper
1 Cup of extra virgin olive oil

Directions:

Put all ingredients in a mixing bowl expect the olive oil. Whisk until smooth fluffy. Then slowly add the oil a couple drops at a time. Make sure the oil is mixed well before adding more. If you add to much to quickly the oil won't mix in.

It should last a week or two in the fridge. If you don't need all of this mayo. You can cut the recipe in half. Enjoy your mayonnaise.
