Pumpkin Seed Recipe

Pumpkin seeds are rich in protein and fiber and make a great snack. They can be roasted toasted salted and sprinkled with many types of seasonings. You can use the same powder used to season popcorn to get flavors such as barbecue, salt and vinegar, white cheddar, dill pickle and many others.

Here is the best way to get salted pumpkin seeds.

1. Remove and clean seeds from pumpkin.

2. Place seeds in a pot with a very small amount of water.(water should almost be evaporated when done) Add twice as much salt (I prefer using sea salt) as you would sprinkle over them if they were spread out. Stir in well.

3. Cook on medium for 10 minutes stirring often.

4. Place on no stick cookie sheet and spread them out. If you have to much water left you should drain it off first. A little is OK. If you want them saltier you can sprinkle more salt on.

5. Bake at 250 degrees for 30-45 minutes, stirring after 15 minutes. Test at 30 minutes, if you want them dryer continue baking.

6. Store in air tight container or zip lock bag. Enjoy
